New research suggests that one should only cook their potatoes, toast, and other starchy foods until they’re yellow, not golden brown. When these starchy foods are heated to high temperatures, they produce a chemical called acrylamide, which animal studies have linked to cancer, and is linked to the golden brown color when toasting, frying or roasting. Though there is no human research, the Cancer Research UK says if you’re particularly concerned, eating a balanced, healthy diet, quitting smoking, and drinking less are some of the easiest things you can do.
